I've really been on a muffin spree lately. I went to the library and found a muffin cookbook, and so many recipes looked delicious! I tried some applesauce muffins (because we have a huge glass jar of applesauce to use up!) that I really liked. They had a nice flavor - not overwhelming, but very delicious! Then I tried sweet potato cinnamon crunch muffins. Those weren't bad, but I think they would have been a lot better if I had used yams instead of sweet potatos. Maybe I'll try them again! Today I made orange cranberry muffins. And let me tell you something...it took all the determination in the world to not make the next muffins on my list - cinnamon buttermilk! I'll have to make those tomorrow!!
